Lely Farm and a Taste of Skyr

We stopped at the Lely farm that now has a restaurant and ice cream store. The farm was in the family and at this point 3 sisters and 1 brother run the farm, restaurant and store. They have 2,000 hectares. The parents were just farmers, but their children saw an opportunity to appeal to tourists.They added on the restaurant and store. They make and sell lots of ice cream. One of the sisters gave us a talk on what they do. She was delightful but also very intelligent. Then we were treated to Skyr (the product has milk separated from cream; then retin is added to the milk portion and it is hung to dry some), Whey (what drips from the skyr) and Ice cream. We added sugar and milk to the skyr to make something that tasted close to s deilicious greek yogurt.
